There’s nothing quite as wonderful as being back at mum’s for a good old home-cooked meal. For Mother’s Day this year, we got the mums of DC team to share some of their (And our!) favourite recipes; from quick and delightful one bowl meals, to traditional family classics and toasty bakes. So from our kitchen to yours, we hope you enjoy these recipes made with love! For a super simple and savoury meal, Xylia’s mum, Rachel, shares her easy Stir-Fried Udon recipe that you can whip up in 3 steps, using ingredients you probably already have. You’ll love this bowl of springy goodness because it’s flavourful, homey and uncomplicated!
Rachel’s Stir-Fried Udon Recipe
Serves: 2
Ingredients:
3 blocks frozen Japanese udon
~125g minced pork (Or whatever meat you like!)
½ can button mushrooms (optional)
½ tbsp butter
~2-3 tbsp kicap lemak manis
1 tbsp oyster sauce
A handful of spinach
Cooking Instructions:
1. Set aside frozen udon to thaw a bit for 5-10 mins. Meanwhile, heat the butter in a large frying pan over medium heat, add mushrooms and minced pork. Drizzle some Kicap Manis and stir-fry for 2-3 mins till the pork has cooked.
2. Add the udon and separate the noodle strands with the spatula. Add the oyster sauce and remaining Kicap Manis, stir well.
3. Toss in a handful of spinach and stir till the spinach has wilted. You can add a bit of water to help with this. And you’re done, enjoy!
